We live in a time where discussion about coffee has become more intense than ever. Specialty coffees are growing, artisan roasters are multiplying and terms like unique origin, washed OR roasting profile they begin to become more and more familiar.
Yet millions of people drink the same commercial coffee every morning, from the same package, without asking too many questions. Is it a bad choice? Is it a «bad» coffee? Or simply, is it something that works for them?
What is «bad coffee»?
“Bad coffee” simply doesn’t exist. Because taste is subjective, and coffee is more than aromas and volatile compounds: it is emotion, routine, memories.
An instant coffee or a super commercial blend is not «bad» if:
- It suits the taste of someone who grew up with that taste.
- Creating comfort and safety in a daily ritual.
- It refers to a personal story: family, work, life.
In a way, every man has his coffee. For some it is the strong and bitter coffee they have been used to for years, for others it is a more delicate coffee, with more complex aromas. The important thing is to choose what you really like, not what is considered «correct» or «fashionable».
But why do we choose commercial coffee?
It’s simple: consistency, availability, price and habit.
If you’ve been drinking the same brand of coffee for 10 years, your taste is calibrated to that profile: oily, bitter, strong roasted. Everything else will seem «spoiled», sour or weak. That doesn’t mean you have «bad» taste. It means that your tastes were formed in a certain context, and this is absolutely natural.
Also: Not everyone wants to experiment. Many just want coffee that «works»: energizing, warm, familiar. And that’s fine.
And yet, what Bring extra special coffee?
Specialty coffee does not try to replace the tastes of others. Its purpose is to open an additional door, not close the old one.
Locally roasted, controlled-origin coffee brings transparency, diversity and depth.
Ok and what exactly does it lead to:
- Natural aromatic notes (no added flavourings).
- Clear origins and traceability.
- Respect for the producer, the land, the process.
- Potential for personal discovery.
- Encourage local entrepreneurs.
But all this only makes sense if you are willing to look for it. They are not mandatory. They are optional, valuable, and sometimes revealing.
Openness does not mean changing, but trying
We do not aim to «convert» anyone. We do not want to replace rituals, but to integrate them. If you’ve been drinking commercial coffee for 20 years, there’s no need to give it up. But maybe it’s interesting to see what else is out there.
Maybe you like to alternate: one day your regular coffee, the next a medium-light roasted Nicaragua with hints of orange and milk chocolate. You may discover an espresso that requires no sugar like a very fruity Ethiopia. Or maybe you just don’t like specialty coffee at all. This is fine too.
We believe it is more important to choose consciously than to choose «correctly».
Conclusion
There is no such thing as bad coffee. There is an unknown cafe.
There is coffee drunk out of habit and coffee drunk out of curiosity.
There’s coffee that means home on the agenda, that typical coffee you drink every day, familiar and comforting. Then there is coffee which means exploration, something truly special, a homemade coffee that surpasses even what you find in the best coffeeshops in the city. A specialty coffee with SCA scores of 88-90 points or more that brings a complex flavor profile and a completely different experience, even in the comfort of your home.
In TOGO, the coffee is roasted here locally, in Cluj, with care and dedication to quality. But not to compete with people’s habits, but to offer an authentic alternative to those who want more, different, different.
For some, the ideal coffee is already there, every morning. For others, it may be right here, just a click away, waiting to be discovered. And both options are perfectly valid.
