Slow coffee: what is it?

The origins of slow coffee

How to prepare slow coffee
Preparing a slow coffee requires engaging in a ritual, where every detail, every step, every gesture counts. This celebration of the senses is worth celebrating, and you will find just as much pleasure in taking the time to appreciate them the processthan tasting the final result.
Which coffee to choose?

The choice of cereals is necessarily crucial. Give priority high quality beansfreshly toasted. At Cafés Méo we recommend varieties of arabicarenowned for their complex aromas and subtle notes. Single-origin coffees, such as Blue Mountain from Jamaica or Bourbon Pointu from Reunion Island, offer rich flavor profiles that lend themselves perfectly to this method.
The steps for a perfect slow coffee
- Fresh ground: Grind your beans just before preparation to maintain all their freshness. There grind it must be adapted to the chosen method, neither too fine nor too coarse.
- Precise dosing: Use a scale to weigh the coffee and water. In general, 60 g of coffee per 1 liter of water.
- Water temperature: The water must be heated between 90 and 95°C, avoid boiling water so as not to deteriorate the aromas.
- Infusion lens: The water should be slowly poured over the ground coffee with circular movements. Leave to infuse for the time necessary for the magic to work (between 3 and 4 minutes).

The siphon coffee maker

This method echoes the history of Cafés Méo. We have always been keen to support our customers, especially catering professionals, in the preparation of their coffee to offer real experiences to their guests. The siphon coffee maker (also called vacuum) it has an impressive alchemist design and a very interesting taste result. Using a back and forth system, the water passes through the ground multiple times. The water in the lower bulb is heated until boiling, the steam rises into the upper bulb where the ground coffee is located due to the pressure, then the condensation that forms falls on the grounds and finally descends into the lower bulb due to the effect of gravity. This gives an extremely aromatic coffeea real nectar!
Chemex

With its harmonious and decorative design, it is the slow coffee method par excellence! It is inspired by the electric filter coffee maker that we know well but allows you to control the flow of water that infuses the coffee and its temperature. It involves pouring the water in several stages, making circular movements over the entire surface of the filter to wet the ground coffee in order to slowly extract all the aromas.
The Cafflano

But be careful when grinding the coffee! It must be coarse so that the grounds do not pass through the filter built into this coffee maker. The advantage of this technique is complete control over the brewing time before filtering and therefore the potency of the final result.
The aeropress
The Aeropress, like the Cafflano, is the coffee maker ideal for backpackers ! When tasting, however, it will give a result much closer to espresso. This is the method furthest from filter coffee, although ultimately the process is very close to the French press.
