  • Light to medium body – Unlike full-bodied winter coffees, in spring we prefer a lighter body that allows the subtle nuances to express themselves.
  • Natural sweetness – Notes of tropical fruits, peaches or berries create a harmonious balance between acidity and sweetness.

Heirlom from Ethiopia – Floral and citrus complexity

High altitude berries, washed and processed, which give a floral aromatic profile of jasmine, bergamot and lemon. Ideal for filtration methods such as V60 or Chemex.

Colombia Red Caturra – Tropical fruit and refined balance

This coffee features a combination of natural sweetness and controlled acidity, with notes of hazelnuts, walnuts, citrus and chocolate. Suitable for espresso or AeroPress.

Nicaragua Bourbon – Explosion of citrus and milk chocolate

Coffee appreciated for its complexity, with notes of orange, milk chocolate and a light hint of cocoa. Excellent for manual preparation.

Advanced preparation methods to intensify flavors

Cold beer control

A slow, low-temperature extraction process that enhances the sweet and fruity notes of the coffee. We recommend coarse grinding and an infusion time of 14-16 hours. For best results it is essential to use filtered water and store the infusion in the refrigerator in an airtight container. Cold brew can be enjoyed neat, over ice, or mixed with milk for a balanced cold brew.

Espresso with prolonged extraction

By adjusting the extraction time to 30-35 seconds and the water temperature to 93°C, espressos with a lighter body and delicate aromas can be obtained. It is essential to adjust the grinding degree so that the extraction is uniform, avoiding under-extracted or over-extracted. For extra flavor you can use pre-infusion (blooming) for a few seconds to better release the coffee aromas.

Variable temperature infusion

Methods like Hario Switch allow precise control of the contact time between water and coffee, highlighting different flavor layers depending on the water temperature. By using higher temperatures (96-98°C), it is possible to intensify the sweet and caramelized notes, while at lower temperatures (88-90°C) floral and citrus nuances can be enhanced. For uniform results, a controlled pouring rate and even distribution of water over the mud is recommended.
